BLUE CRAB AND CORN SALSA

This salsa goes a long way.  Serve it with tortilla chips or let it accompany your next meal.  This will be gone before you know it!

½ pound corn (thawed if frozen)

¼ cup diced red pepper

¼ cup diced green pepper

¼ cup diced purple onion

¾ cup diced roma tomatoes

2 tablespoons chopped garlic

1 teaspoon old bay seasoning

¼ teaspoon kosher salt

¼ teaspoon black pepper

½ teaspoon crushed red pepper

Juice of 1 lime

Zest of 1 lime

1/3 cup fresh chopped cilantro

¼ cup white vinegar

½ LB. jumbo lump crab meat

 

-Mix all ingredients into a bowl.
