MARYLAND CRAB SOUP
This is the soup everyone talks about. If you are ever in Maryland, you certainly had this at one time. Fresh blue crab, vegetables, with that bite of old bay. How could you possibly go wrong?
½ cup clarified butter
2 cups scallions
4 ears of corn (husked and kernals taken off)
1 10.5 oz. cherry tomatoes
1 tablespoon fresh chopped garlic
1 cup frozen mixed vegetables
4 tablespoons old bay
1 28 oz. can diced tomatoes
¾ cup fresh chopped parsley
4 cups water
1 LB. claw meat
-Melt the butter in a heavy cooking pot.
-Add the scallions, corn, cherry tomatoes, garlic, 2 tablespoons of the old bay, and mixed vegetables.
-Cook on medium high heat stirring occasionally until tomatoes are soft and can be crushed with a wooden spoon.
-Stir in the can of diced tomatoes and cover the pot until a slow boil.
-Next add the water, claw meat, parsley, and 2 tablespoons old bay.
-Let simmer, uncovered, for 30 minutes.
